Ultimate Veggie Salad

This colorful veggie salad is pretty hearty, pretty healthy and just pretty to look at.   Remember when it comes to salads the more colorful the more healthy!

Serves 8-10

INGREDIENTS
3 Stalks of Celery
1 Red, 1 Yellow, 1 Orange Bell Pepper
3 Avocados (it’s a lot but we have a lot here in Kauai)
4 Ears of Corn (cut off)
20 Grape tomatoes or 10-15 Cherry tomatoes or 4 big tomatoes
1 Cup of crumbled Feta from a block
3 Mini Heads of Artisan Lettuce
Balsamic Olive Oil Vinaigrette

DIRECTIONS
Wash all veggies and lettuce. Chop up celery, peppers, and avocados. Boil corn and cut off nibblets from the ear. Add all veggies to a bowl with the lettuce. Top with tomatoes and crumbled feta. Drizzle dressing or give people the opportunity to have their dressing on the side.

    My husband and my parents loved this! They thought the celery was a fun addition. What a great crunchy, fresh tasting salad!
